There's lots of youtube interviews that answer this question. The answer was a couple hundred - kept in undisclosed locations. Couple years back he expressed interest to sell many of them that really deserved to be played.
If anyone's feeling savvy, post a link to some of these interviews?
I think when Joe was on the cover of Vintage Guitar magazine, his collection number was also discussed.

I'd play it until the frets wore down to the point where there was no wire left, get it re-fretted and do it all over again!
