I'm willing to doubt they'd put flamed maple underneath a gold top these days.
If you wanted to know the grain pattern, i'd look no further than the sunburst JBLPs that were made. None of them have flametops.
It will be a gamble!
2 things:
1. The custom shop DOES spray gold over an occasional flamed top. Here are links to an R7 that I sent to Kim LaFleur to be stripped and re-sprayed with gold. As you can see, there was no way that I was going to cover that top up with gold. The best way to tell if your maple cap is flamed is to look in the control cavity. The first picture shows it after the gold had been stripped:

After the "re-finish":

2. It's your guitar, but I would NOT strip a Custom Shop JBLP. It's a limited run, and you will de-value it to nothing. If you're jonesing to go Kossoff on a guitar, look around on eBay, TGP, or your local guitar shops for a used Les Paul that plays good to you. You'll be saving money on both ends....

Before I would do a major mod on a limited edition I'd sell it to someone else who would appreciate it for what it is, and then go and buy a project guitar to work on.
That R7 is bo-dacious!
Thanks!
Ted, I didn't mean to hijack your thread.

I agree....Don't mod the Goldtop. You would better serve yourself by either selling it or getting another LP and work on that. I don't have a JBLP...I wish I had gotten one when available. They are special just the way they are...It would be a crying shame to alter it.

There might be a slight flame-figuring of maple under a sprayed goldtop/painted Les paul...but you'd be a fool to strip one just to find out.
P/S Some of The Bonabusrt -Sunburst Les Pauls had some flame to them...just from reading comments in this forum.
On Joe's RAH Bus interview look very closely on his LP - there is flame underneath (gotta love Blu-ray!)
My bonaburst is flamey. Some are some aren't.
it's your guitar but I'd have a really hard time monkeying with any of my Joe guitars.....
Thanks guys for your input, I knew this was gonna get me a few raised eyebrows but this is how I see it...I've always wanted a flame top but their easily to come by weather CS or standard, but when I first read the guitarist review on the JBLP what drew me to it was that Joe asked fir all specs that you would find very hard to come by ie dish, lowered logo, grovers, thick chunky headstock.....these were all the things that I looked for in a Les Paul, but if I had of gone into any big guitar store and asked for these specs they would have just looked strangely at me or else said 'can't get it!' for the record I wouldnt risk anything on this guitar as it is my pride & joy not because it's a custom shop JBLP but because it's everything I've ever wanted (except for the flame top) in a les Paul and it's mine!!

goldtops rule! BUT what about looking around for a bonaburst? maybe that would quench your thirst in the meantime.
