I top wrapped my LP Traditional about a year ago, and I haven't noticed much of a difference in tone o playability.  The setup hasn't been quite as good as before, but that's purely my fault and probably has more to do with 'feel' changes.  This is my first LP so I'm still getting used to doing a good setup.  I did bring the tailpiece down to the body, but I didt crank it. How tight did you all bring it down?

Put .11s on it if you like. They will feel like .10s strung the usual way.

You shouldn't have to turn them very hard screw them down with a screw driver becareful not to chip the plating and don't he-man the studs once they stop that should be good enough.
