If he were in the mood for an instrumental to bring down the house, I would suggest "Courage" by Mason Ruffner.  Soaring notes, a couple of good runs, Bogey would enjoy.

It has been mentioned before but Robin Trowers Bridge of Sighs would be a great cover by Joe.

I saw Bridge of Sighs and Stranglehold.

I'm not sure.  Those are just too awesome for me with their own flavor.  I don't need to see those covered.  They are too perfect for me.  And opposed to what many of here think, you'd be hard pressed to touch the vocals in those songs.
2 of the best vocalists with 2 of the best guitarists.  It would have to have a new twist.

Total agreement River Cat! I/We could probably pick apart so many of those put forth here for the exact reasons you express. 
Don't list the perfect ones.  To me that just means a person has ascended Joe's abilities and talents to the reverence they hold for the "perfect" cover, essentially, something "like this" I believe many really mean (could be very wrong though). Why risk injustice? He historically likes obscure, off the beaten path covers for the most part anyways.
