Hello,
I'm french and newbie 
I would like to know if Joe uses (during its performances) its guitars with stock pups or does it use sometimes other pickups? thx.

Welcome! Joe uses Gibson Burstbuckers 2 and 3 in his Signature Les Pauls.

many people think (in french forum) Joe replaces pups because they are not good enough... for me all the BBs are great (over the good LP sure)...

I read in another forum that Joe always keeps the stock pickups in his various guitars. And somehow he always sounds like Joe . . .

I definitely read that too. I'm pretty much the same way. I like things original.

In one other Les Paul he said in a gear video that he has PAF's as in his '59....but for the most part they are Burstbucler 2 and 3.
