I guess not all of us can grow up in the sticks... but I'm glad I'm able to do it or I probably wouldn't eat that much meat either.  At least I know where this meat came from and won't be tainted or mishandled in some way.

Jane I think everything you said was awesome. I figure me not eating meat isn't going to make a huge impact, but at least I'm no longer part of the problem. I do everything I can to spread the word to people so at least one or some will think about it and look into what they can do to make a change by buying local meat, poultry and produce if going meatless is not appealing. -S

Thanks Brack - I hadn't come across Simon Rimmer before.

If anyone's looking for reliable and tasty recipes I'd particularly recommend Rose Elliott cookbooks.  If you like pulses and beans a good book of hers is the Bean Cookbook.  I love the lentil and fennel bake.  If I want something a bit more challenging I'll check out Yotam Ottolenghi's book Plenty.  He's not a vegetarian chef, but has some wonderful recipes.  Trouble is you end up with a store cupboard full of things you probably only use once.  Anyone know what to do with Ras el Hanout spice hmm ?

Some of the UK supermarkets have some great online recipes too (Waitrose for example).  I've got so many cookbooks but like most people only ever do about three or four recipes from each one.  One day I should compile a folder of my favourites and put them in one place.

Well one good thing you can do is substitue tofu for meat in chili.  We get extra firm tofu and cook it up in a pan kinda as u would meat and it makes for great chili.

Here's a tip when using Tofu ..... it's Soy, beancurd, protein, and only really requires minimum cooking,  5/10mins,  tops

sheer Heresy! lol now I like tofu stir fried in chinese dishes with hot and spicy type sauce, but this is a true culinary no-no from a southern US perspective. In fact, real Texas chili does not have any beans in it, surprise surprise. They are served on the side if at all. For a different chili, just substitute a variety of beans whatever you like and ramp up on the vegetables, make it chunky as possible. sorry, I will confess to being a chili snob and have seen everything in it from armadillo to rattlesnake, but tofu is just a tad bizarre.

Well if u dont like the idea. Dont eat it. I really dont care what u think chili should be.  Some people Asked for some ideas and i gave one. I like it its healthy .and feel free to eat your chili and way u want.

I apologize if you are offended, but I did use a smily face and wasn't laughing at you or vegetarians. There are probably a few thousand chili recipes out there much more different than yours.

I'm with the no tofu nowhere (in chili) crowd.  But I admit, it's another creative idea for the tofu everywhere crowd.  ....Colorado chili, NOW yer talkin' sport!!!

Actually Jane, that is HOW I make Colorado chili in New York, with venison.  Buffalo, if available also.  But never chicken or tofu.

Some may know this already... but here's a little tip for Chilli lovers, - add a some high quality chocolate (77% coco) just before serving ... Yummy!

absolutely true Brack, a variation borrowed from the Mexican mole sauces. the famous Skyline in Cincinnati's recipe calls for 1 tbsp unsweetened cocoa powder.

I'm not a vegetarian, but I love vegetables and have a large garden and 4 hens that provide us with eggs every day. Nothing better than going out to the garden, digging up some potatoes and onions, and frying up some eggs. One of my favorite lunches. I get alot of good recipes from williams sonoma site. Have had a ton of zucchini lately that I have been making into a buttermilk squash soup that I freeze to have in the winter.
